Pizza Power: Heart-Healthy

Pizza is yummy but very easy to eat too much of. The crust is full of (refined) starch, and the cheese is full of saturated fat. Here is a heart-healthy recipe the uses zucchini and cauliflower in the crust and coconut flour to cut back on the starch. The cheese is made of nuts for heart-healthy mono-unsaturated fats and hemp seeds for omega-3 fatty acids as well as cauliflower.

Crust

1) 2 cups shredded zucchini

2) 1/2 cup coconut flour

3) 1/2 cup psyllium husk

4) 1/2 cup coconut butter or coconut oil

5) 24 grams pea protein powder (optional)

6) 24 grams brown rice protein powder (optional)

Cheese

1) 1 cup cashews or blanched almonds

2) 1 cup cauliflower

3) 2 Tbsp apple cider vinegar

4) 1 Tbsp lemon juice

5) 1/4 cup yeast

6) 1 Tbsp turmeric powder (optional, but it is a good anti-inflammatory)

6) 1/2 cup hemp seed or soaked chia seeds (optional)

7) 24 grams pea protein (optional)

8) 1 shredded carrot (optional) I put olives, pizza sauce, and spinach as toppings. You can put mushrooms or whatever else, or leave out something if you don't like. I didn't put the toppings and pizza sauce in the recipe as that is up to you. Another option is to put the cheese, sauce, and toppings on grilled zucchini rather than make the crust.
