Heart-Healthy Walnut Beef

1) 2 cups ground walnut 2) 1 Tbsp ground cumin seeds 3) 1 cup shredded cauliflower florets 4) 1 cup shredded broccoli 5) 1/2 cup hemp seed or soaked hemp seeds 6) 1 cup shredded spinach leaves

7) 1 cup shredded mushroom 8) 1 small onion 9) 1 Tbsp salt 10) 4 Tbsp avocado oil 11) Roughly 24 grams pea protein (optional) 12) Roughly 24 grams brown rice protein (optional)

Mix everything together in a food processor. Or you can mix the vegetables in the food processor, and then mix the veggies with other ingredients by hand. While hemp seed is good, soaked chia seeds give it a juicy texture. It is good as it is, even without heating. Although you can microwave or stir fry on avocado oil. I prefer avocodo oil because it has a high heat index. Olive oil is rich in mono-unsaturated fat, but it has a low heat index, so cooking with it breaks down the fats in a way that the fatty acids are not as heart-healthy.

While this is more like a taco ground meat in texture, you can make a patty out of it. On the left is a Beyond Burger, and right is this walnut meat shaped into a burger (although I also added some red onions).
