Have Your Salad and Eat Your Cake Too
I was tabling at Veggie Connections in Smyrna, Georgia on August 25, 2018 with this chocolate, peanut butter cake. My philosophy is, why stop eating junk food and replace them with salads when we can turn junk food into health food that happen to be salads. This is the picture of the cake I had, one side with frosting, and one side without. It is a simple recipe.
Crust
2 cups cocoa beans
1.5 cup cauliflower
1 cup brocolli
1 cup spinach
1 cup peanut butter
½ cup flaxseed meal
2 cups stevia
Frosting
1 avocado
½ cup peanut butter
½ to 1 cup stevia
Instructions:
1) First put the cocoa beans in the food processor, grinding as much as possible into powder. It is good to have a few chunks as it tastes like chocolate chips. Put the powder in a bowl. Or, if you want, just put it in the Tupperware or storage container that you plan to use for the cake to save time rather than making the cake in the bowl, and then transferring to a container. If you choose to use to do that, you can apply that to the rest of the steps that involve a bowl.
2) Then add the vegetables to the food processor. You can do them all at once or one at a time...whatever is easiest on your food processor. Add this mixture into the bowl.
3) Add the rest of the ingredients into the bowl. Mix with an egg beater, large spoon, or your hands...whichever is easiest.
4) Mix the ingredients for the frosting in the food processor. Then apply on top of the cake.
